We are delighted to be supporting our client in recruiting a Junior Sous Chef for their luxurious hotel property based in the Scottish Highlands. 
 
As a Junior Sous Chef, you will work closely with the Head Chef and Sous Chef to ensure the smooth operation of the kitchen, maintain high standards of food quality and presentation, and contribute to the creation of innovative dishes.
 
Responsibilities are but not limited to:

  • Assist the Head Chef and Sous Chef in planning and organising kitchen operations.
  • Prepare and cook high-quality dishes according to established recipes and standards.
  • Supervise and mentor junior kitchen staff, ensuring they adhere to recipes, portion sizes, and quality standards.
  • Monitor food inventory levels and assist in ordering supplies as needed.
  • Ensure proper storage and rotation of food products to minimise waste and maintain freshness.
  • Maintain cleanliness and hygiene standards in the kitchen area, including equipment, utensils, and work surfaces.
  • Adhere to all health and safety regulations and guidelines.
  • Assist in menu development, including contributing ideas for new dishes and specials.
  • Collaborate with other kitchen staff to ensure smooth coordination during service.
  • Take initiative to identify areas for improvement and implement solutions to enhance kitchen efficiency and productivity.

Requirements for the role are:

  • Proven experience working in a professional kitchen environment, preferably as a Commis Chef or Demi Chef de Partie.
  • Culinary qualification from a recognised institution is desirable.
  • Strong understanding of culinary techniques, ingredients, and flavor profiles.
  • Excellent organisational and time management skills.
  • Ability to work effectively in a fast-paced environment and handle multiple tasks simultaneously.
  • Strong communication and leadership skills.
  • Attention to detail and a commitment to maintaining high standards of food quality and presentation.
  • Flexibility to work evenings, weekends, and holidays as required.
  • A passion for food and a desire to continually learn and grow in the culinary field.
